It is an original and genuine expression of Ribolla Gialla, with an olfactory profile of sweet spices, cedar, honey and caramelized citrus. Med-bodied and intense taste, punctuated by freshness, minerality and savoury. Well balanced and very pleasant.
Grapes are selected from the highest and sunniest spots, destemmed and left with their skins in big open-topped vats for the alcoholic fermentation for 8 days, wild yeasts only and no refrigeration. After light pressure, wines are racked to big Slavonian oak casks and left with the fine lees for at least two years.
