Valentin's vineyards are planted with Chardonnay and Savagnin for white wines, and Pinot, Trousseau, and Poulsard for reds. The soils are Jurassic, composed of Triassic Marne (marl). Valentin's vines are on average 40 to 45 years old, except for the Bois d'Arnaux vineyard, which is a younger plot planted by Valentin himself.
Valentin's winemaking philosophy is one of minimal intervention. He harvests his grapes manually, ferments them in small barrels with indigenous yeast, and ages them on the lees for 24 months. The wines are unfiltered, unfined, and no sulfur dioxide is added.
One of Valentin's most famous white wines is his Savagnin "Bois d'Arnaux." This wine is made from grapes grown in the Bois d'Arnaux vineyard, which is a unique terroir that is well-suited to the Savagnin grape. The wine is fermented in small barrels and aged on the lees for 24 months. It is a complex and elegant wine with a long finish.
