Vinos Ambiz is a micro-winery run by Fabio Bartolomei.

Fabio Bartolomei, who grew up in Scotland to Italian parents, moved to Madrid over 20 years ago. It was not too long afterwards, in 2003, when he decided to pursue a personal interest (and family tradition) in winemaking and rented a small plot of Airén from an old winemaker in La Carabaña. He began to make wine using people’s garages and any space he could borrow in and around Madrid and the Sierra de Gredos with grapes from this plot. It was only in 2013 when he managed, with friend Daniel Ramos, to rent an old wine co-op’s cellar in the village of El Tiemblo where he set up his own fixed bodega. He now has plots dotted around the Sierra de Gredos hills, including the original in La Carabaña where he still grows Airén and Tempranillo from old vines.


The Sierra de Gredos region has an interesting wine-making history and a perfect topography and climate for making beautiful terroir expressing wines. The climate here, like that of Madrid city, is continental. Very hot in summer and cold in winter, yet the relative elevation here means that the grapes maintain enough freshness to not bake. The granite/sand soil drains well and retains heat, helping the ripening process. The soil is nutrient-poor, forcing the vines to work harder, increasing complexity and minerality.


Fabio works with several indigenous and often under-represented grape varieties such as Doré, Malvar, Airén, Albillo and Chelva, and the more common Sauvignon Blanc, Garnacha and Tempranillo. Though common isn’t a fitting adjective for Fabio’s wines. Variety and experimentation may just be what drives Fabio, and for this reason, he tries new and different winemaking methods every year. He vinifies using amphora, stainless steel, plastic and oak barrels as well as concrete and will rarely ever produce more than 1000 bottles of any one cuvee.

Airene 2019

Region: Sierra de Gredos, Spain

Grape: Airen

Style: Orange Short Maceration

The Airene from Vinos Ambiz stems from the Spanish Airen grape variety aged in stainless steel. It’s aromatic, like papayas, marmalade, baked pineapple and orange skins, buttery-gold hue, wine with low acidity and a cool flavour which reminds us of an Orange Juice. Bold, explosive and very rich in fruit,  but persistently refreshing. Another perfect wine for orange wine lovers.

 

Airene Barrica 2019 

Region: Sierra de Gredos, Spain

Grape: Airen

Style: Orange Short Maceration

The Airene Barrica from Vinos Ambiz stems from the Spanish Airen grape variety aged in oak barrels. It’s aromatic, like peach, fresh apricot, quince jam, orange zest, buttery-gold hue, wine with low acidity, and a cool flavour that reminds us of Peach-Orange Juice. Like its stainless steel counterpart, the “Barrica” is also very explosive and very rich in fruit, but more refined with a more mineral finally.

 

Alba 2019

Region: Sierra de Gredos, Spain

Grape: Albillo

Style: Orange Short Maceration

The Alba from Vinos Ambiz stems from the Spanish Albillo grape variety aged in amphora. It’s an aromatic, peachy orange, buttery-gold hue, wine with low acidity and a cool flavour which reminds us of a Mandarin-Peach juice. Rich in fruit whilst showing a light and delicate touch. Fresh almonds in the nose as well as grilled pineapple and a pleasant walnuty aftertaste. The perfect wine for orange wine lovers.

 

Carboniferous 2019

Region: Sierra de Gredos, Spain

Grape: Garnacha

Style: Fruity and juicy red

A Grenache that is vinified using the carbonic maceration method, the result is a complex and funky red wine. Slightly fizzy at the beginning, it has some volatile acidity, flavours of black currant, sour cherry, leather and black pepper. Fruity and refreshing, more like a light red or a dark rosé. Better to drink slightly chilled.

 

Garnacha 2017

Region: Sierra de Gredos, Spain

Grape: Garnacha

Style: Deep and complex red

On the nose aromas of red cherries, cassis, strawberries and plum backed up by pleasantly earthy and wet forest notes. The palate is fresh, jammy and juicy, with black fruit flavours and silky tannins leading to a refreshing finish. Very pleasant, easy to drink. A real fruit explosion!
