On the nose, warm ripe aromatic yellow fruit, such as peach and quince with scents of camomile and cookie dough. But the taste is fresh and green, with hints of granny smith and citrus. The acids are piercing and pointy, but the full malolactic fermentation and the use of barrel ripening provide fullness and roundness.
This Aligoté comes from two plots, which have a total of 0.17 hectares. The first plot comes from the Santenay hills. The second part lies on a clay-lime underlay the appellation “Sur le Bois” Maranges.
