Pét-nat is an abbreviation for 'pétillant naturel' or naturally sparkling. Unlike traditional sparkling wines which blend different dry wines and put them through a second round of fermentation and ageing, pét-nat natural sparkling wines are bottled while still undergoing the first round of fermentation. The French call this process 'methode ancestral'.
